Avocado Tempura

Ingredients:

  • 2 ripe avocados

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon smoked paprika

  • 1 cup ice-cold sparkling water

  • 1/4 cup vegetable oil

  • Salt and pepper to taste

  • Lime wedges for serving

Instructions:

  1. Cut the avocados in half, remove the pit, and slice into thick wedges.

  2. In a large bowl, whisk together the flour, baking powder, salt, and smoked paprika.

  3. Slowly pour in the ice-cold sparkling water while stirring constantly until a smooth batter is formed.

  4. Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 375°F.

  5. Dip the avocado wedges into the batter and gently place them in the hot oil. Fry until golden brown and crispy, for about 2-3 minutes.

  6. Use a slotted spoon to transfer the tempura to a paper towel-lined plate to drain any excess oil.

  7. Season with salt and pepper to taste and serve hot with lime wedges on the side.
