Ingredients:

  • 1 cup raw cashews, soaked in water for at least 4 hours

  • 1/4 cup nutritional yeast

  • 1/4 cup plain, unsweetened almond milk

  • 2 tablespoons lemon juice

  • 1 tablespoon apple cider vinegar

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon smoked paprika

  • 1/4 teaspoon turmeric

Directions:

  1. Drain the soaked cashews and rinse them under cold water.

  2. Add the cashews, nutritional yeast, almond milk, lemon juice, apple cider vinegar, garlic powder, onion powder, salt, smoked paprika, and turmeric to a high-speed blender or a food processor.

  3. Blend the ingredients until the mixture is completely smooth and creamy, scraping down the sides of the blender or food processor as necessary.

  4. Transfer the mixture to a saucepan and heat it over medium heat, whisking continuously, until it thickens and starts to resemble melted cheese (about 5-10 minutes).

  5. Pour the melted cheese into a small dish or jar, cover it and chill it in the fridge for at least 1 hour to let it firm up.

  6. Once the cheese is firm, it's ready to use as you like! You can slice it for sandwiches, grate it for pizza or pasta, or use it as a dip for veggies or crackers. Enjoy!
